Snowppuccino for Snow Days!
With our second snowstorm of the season hashtags like #snowmaggedon and #snowpocalypse popular across the U.S. are trending here in the Willamette Valley too. And I have the same zeal and childlike joy for snow days as every other full grown adult I’m friends with. But after not leaving the house for four days I did start to creep toward stir crazy. Couple snowed-in-for-days with a weekly Instagram smoothie contest I like to enter and a frappuccino made from snow was bound to happen.
I set out a glass overnight and brought this snowcone in the next morning. And gleefully blended it with black coffee, a fresh banana (frozen wasn’t necessary this time!), a few medjool dates and chocolate-flavored sunflower seed almond butter from Wild Friends – an awesome local company started by fellow UO Ducks Erika and Keeley.
This raw dairy-free “frappuccino” was sweet, creamy and slushy without being too sweet or leaving that filmy dairy residue behind like a Starbucks frappuccino. And I even threw in one leaf of Tuscan kale. I couldn’t resist.
While I didn’t win the Instagram contest, I made this “smoothie” every day I was snowed in. Now that the snow is thawed I already miss it.
But we’re rumored to be getting a third #snowpocalypse next week so I’ll be making the next batch with Wild Friends’ vanilla espresso almond butter. I can’t wait!
