Smoothie Roll-ups!

First and foremost, let me say that this is more time-consuming than making your daily smoothie. And by that I mean, your knees will actually start to realize just how long you’ve been standing at the counter washing, chopping, blending, pouring and smoothing – even standing on an anti-fatigue mat, which I totally recommend.

-3I’m reluctant to post pictures of some of the steps in the smoothie roll-up process because not all food pics are created equal. But I promise it tastes better than it looks!

Two simple tweaks to your regular smoothie recipe will make this a lot easier. Olive oil and lemon juice. The olive oil will provide the necessary adhesion so that your smoothie spreads evenly across the parchment paper and then stays in place. The lemon juice will preserve the color during the dehydration process so you don’t have to eat what Martha Stewart’s been eating lately.

Today’s green smoothie is predominantly lacinato kale and cilantro with a little spinach and radish sprouts. I made double the quantity I normally make so the rest will go straight into the dehydrator. I can’t wait to post the results!
