Gluten-free, Mom-made Muffins!
My mom is an excellent cook and baker, and her aptitude in adapting family favorites to gluten-free recipes knows no bounds. Not least of which is her oatmeal muffins. Her basic recipe is just as great with cranberries and walnuts as it is with chocolate chips and walnuts (pictured here.)
She used Bob’s g-f all purpose baking flour combined with g-f oats. They freeze well and I love being able to grab a few to take to work. They defrost perfectly during my half-hour commute and are outstanding with black coffee!
