Blueberry & Beet Greens Smoothie

In slowly trying to add more veggies to smoothies sweet beets are a great green to keep your smoothie from tasting too much like a salad. Or anything that requires a fork.

When I went to do some reading about the nutritional benefits of beet greens I came across something even better! A new-to-me food blog from a fellow Pacific Northwesterner with a recipe for beet green pesto.

I digress.

This quick and easy smoothie is definitely a favorite.

I added lemon peel, fresh ginger and three leftover cherry tomatoes from dinner to half a pint of frozen blueberries. After running out of coconut water (8 grams of sugar) I used orange juice and pomegranate juice. Both have a whopping 32 grams of sugar. I don’t actually know if that’s a lot of sugar per serving but it is four times more than the coconut water so that makes me think maybe a little yikes. But the orange/pom juice combo was just tart enough to balance out the sweetness and keep it refreshing.
